Lallemand offers manufacturing services for bacteria development

Lallemand is expanding into manufacturing services, opening up its expertise in bacteria development and industrial production to the human health and food industries worldwide.

The launch of Lallemand Manufacturing Services is aimed at supporting the company’s existing partners produce freeze-dried bacteria, from process development through scale-up, and to the final industrial production, including fermentation, freeze-drying, formulation, and packaging.

A spokesperson for Lallemand told NutraIngredients that the development is of interest to “any existing or innovative bacteria application in the food industry, live bacteria for health benefits such as probiotics, or for aromatic or technological properties, but also fermentation medium and by-products”.

Indeed, the new Lallemand Manufacturing Services will also provide access to the company’s patented technology platforms for the protection of live bacteria for specific applications: STAR enterocoating technology and Probiocap microencapsulation technology.

The manufacturing services division has three facilities, one based in France (Aurillac), another in Canada (Montreal) and one in the US (Milwaukee). According to the company, the sites offer flexible production capacities, from pilot bioreactors (two litres up to 100 litres) for process development, and up to a 20 cubic metres bioreactor for large-scale fermentations.

“Production will be directed towards a particular site according to the market and volumes of production required,” explained the spokesperson. “The Aurillac plant has the highest production capacity and can cater for the food and pharmaceutical industry, while Montreal plant can also address these markets when smaller volumes are required.

“The Milwaukee plant is operating with AIB certification and Kosher compliance, thus producing for both feed and food industry,” added the spokesperson.

The spokesperson notes that, while other companies do offer fermentation services, the offering from Lallemand is “differentiated by its flexibility and the diversity of markets that can be addessed (food, pharma, or animal feed), our three bacteria production facilities being accredited to the highest quality standards of these industries. Lallemand expertise covers these three markets.”

The company states that it complies with the highest quality standards, including ISO 9001, FAMI-QS, HACCP and ICHQ7A up to GMP Pharma for finished product compliance.
