J. Rettenmaier & Söhne (JRS), a manufacturer of insoluble, dietary fibres and other fibre types, has opened a new production plant for colloidal systems in Weissenborn, Germany.
In addition to its colloidal microcrystalline cellulose - Vivapur MCG - the plant will also be used to produce a unique range of wheat and oat fibre colloidal types - Vitacel WFG and HFG.
According to JRS, the production capacity is currently at approximately 4,000 metric tons with an option to possibly expand capacity. The company adds that the new facility should allow the company not only to expand its existing portfolio, but also the areas of application.
Characteristic properties of colloidal systems include high stability, inert behaviour, and independence from temperature, pH value or other influences as well as taste-neutrality. The main areas of application are in all types of beverages, special cocoa, soy and calcium-enriched beverages, ice cream, dips and mayonnaise, as well as toppings and fruit fillings.
The multi-functionality of the colloidal structure - confirmed by studies at the German Institute for Food Technology - is based on the formation of a three-dimensional network. Functions include action as an emulsion and texture-stabiliser, substitution of fats and oils, prevention of syneresis, controlling the size of ice crystals and foam stabilisation.
